Cranberry Pecan Winter Salad

Ingredients:

  • 2 cups of kale; chopped

  • 2 Cups of Green Leaf Lettuce; Chopped

  • 3/4 Cup of Pecans; Chopped

  • 3/4 Cup of Dried Cranberries

  • 1/2 Cup of Crumbled Goat Cheese

  • 2 Tablespoons of Maple Syrup

  • 2 Tablespoons of Red Wine Vinegar

  • 2-4 Tablespoons of Olive Oil

  • 1 Teaspoon of Black Pepper

  • 1 Teaspoon of Parsley; Dried

  • 1 Teaspoon of Tarragon; Dried

  • Dash of Salt

Instructions:

  • Place chopped kale, lettuce, cranberries, and pecans in a large salad bowl

  • Top with crumbles goat cheese

  • Whisk or blend maple syrup, red wine vinegar, olive oil and spices together until well combined; drizzle over salad and Toss ingredients together until dressing is well dispersed

Options for use: Enjoy immediately or refrigerate for up to 3 days.
