Cranberry Pecan Winter Salad
Ingredients:
2 cups of kale; chopped
2 Cups of Green Leaf Lettuce; Chopped
3/4 Cup of Pecans; Chopped
3/4 Cup of Dried Cranberries
1/2 Cup of Crumbled Goat Cheese
2 Tablespoons of Maple Syrup
2 Tablespoons of Red Wine Vinegar
2-4 Tablespoons of Olive Oil
1 Teaspoon of Black Pepper
1 Teaspoon of Parsley; Dried
1 Teaspoon of Tarragon; Dried
Dash of Salt
Instructions:
Place chopped kale, lettuce, cranberries, and pecans in a large salad bowl
Top with crumbles goat cheese
Whisk or blend maple syrup, red wine vinegar, olive oil and spices together until well combined; drizzle over salad and Toss ingredients together until dressing is well dispersed
