kale bruschetta salad

ingredients:

  • 2 cups of kale; chopped

  • 1 clove of garlic; minced

  • 1 cup of halved cherry tomatoes

  • 1 cup of shredded parmesan cheese

  • 1 baguette; cubed

  • 2 tablespoons of balsamic vinegar

  • 1 teaspoons of basil

  • 1 teaspoons of oregano

  • 2 Teaspoons of red wine vinegar

  • 1 tablespoon of agave

  • 2 tablespoons of olive oil, plus more for drizzling

  • salt and pepper to taste

instructions: 

  • place chopped kale, halved cherry tomatoes and shredded parmesan cheese into a large salad bowl

  • in a small bowl, whisk together minced garlic, balsamic vinegar, olive oil, agave, basil, oregano, salt and pepper until a well combined dressing is made

  • Drizzle additional olive oil over baguette cubes; sauté over medium heat until lightly toasted

  • add baguette croutons and dressing to large salad bowl and toss everything together

options for use: enjoy immediately or refriderate for 2-3 HOURS, if refridgerating do not add croutons until just before serving
