kale bruschetta salad
ingredients:
2 cups of kale; chopped
1 clove of garlic; minced
1 cup of halved cherry tomatoes
1 cup of shredded parmesan cheese
1 baguette; cubed
2 tablespoons of balsamic vinegar
1 teaspoons of basil
1 teaspoons of oregano
2 Teaspoons of red wine vinegar
1 tablespoon of agave
2 tablespoons of olive oil, plus more for drizzling
salt and pepper to taste
instructions:
place chopped kale, halved cherry tomatoes and shredded parmesan cheese into a large salad bowl
in a small bowl, whisk together minced garlic, balsamic vinegar, olive oil, agave, basil, oregano, salt and pepper until a well combined dressing is made
Drizzle additional olive oil over baguette cubes; sauté over medium heat until lightly toasted
add baguette croutons and dressing to large salad bowl and toss everything together
