Ingredients:
1/2 Cup of Butter
1/4 Cup of Sugar
2 Eggs
1 2/3 Cup Flour; sifted
1 Teaspoon of Baking Powder
1/2 Teaspoon of Salt
1/2 Cup of milk
Juice and Zest of 1 Lemon
instructions:
Preheat oven to 350 degrees; Lightly grease a 9x5 inch loaf pan
Cream together butter with 1 cup of sugar; add eggs
Sift dry ingredients (flour, baking powder and salt) together in a separate bowl
Add dry ingredients to butter mixture alternating with milk
Stir in lemon zest
place batter in loaf pan; bake for 50-60 minutes
Mix remaining sugar with lemon juice for a glaze; once bread is finished baking poke holes in the top with a TOOTHPICK and drizzle glaze over the bread while it is still warm
Options for use: Once cooled, enjoy immediately, store in airtight container for up to 5 days or freeze for up to six months.
