blueberry muffins
Ingredients:
2 Cups of Flour
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of soft butter
1 cup of sugar
2 eggs
1/2 cup of milk
1 teaspoon of vanilla
2 cups of blueberries
instructions:
preheat oven to 375 degrees; line or grease 12 muffin tins
in a small bowl, combine flour, baking powder and salt
in a separate large bowl beat together soft butter and sugar until combined; beat in one egg at a time
combine milk and vanilla in small bowl
alternate adding dry ingredients (flour mixture) and wet ingredients (milk/vanilla) to the sugar, butter and egg mixture
fold in blueberries
fill muffin tins; sprinkle more sugar on top (optional)
bake for 25-28 minutes or until golden brown
