blueberry muffins 

Ingredients:

  • 2 Cups of Flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon of salt

  • 1/2 cup of soft butter

  • 1 cup of sugar

  • 2 eggs

  • 1/2 cup of milk

  • 1 teaspoon of vanilla

  • 2 cups of blueberries


instructions:

  • preheat oven to 375 degrees; line or grease 12 muffin tins

  • in a small bowl, combine flour, baking powder and salt

  • in a separate large bowl beat together soft butter and sugar until combined; beat in one egg at a time

  • combine milk and vanilla in small bowl

  • alternate adding dry ingredients (flour mixture) and wet ingredients (milk/vanilla) to the sugar, butter and egg mixture

  • fold in blueberries

  • fill muffin tins; sprinkle more sugar on top (optional)

  • bake for 25-28 minutes or until golden brown

options for use: Once cooled; enjoy immediately, store in an airtight container for up to 7 days or freeze for up to six months.

This is my grandma’s recipe. I am reminded of her every time I bake them.
